GLUTEN-FREE FROZEN MARGARITA

The go-to frozen cocktail for me is a margarita! The glass usually has salt around the rim, but I like to have sugar. There’s something about this drink that makes me feel so refreshed and fancy! And for me, tequila means no bad hangover, so it’s a winner!

 

SERVES 1

2 cups ice

50ml (2 fl oz) gold tequila

25ml (1 fl oz) Cointreau

juice of 2 limes

50ml (2 fl oz) sugar syrup

fine salt or sugar, for the rim of the glass

lime slices, to serve

 

If your ice is in large pieces, give it a little bash to break them down slightly.

 

Place the ice in your blender, then pour in your tequila, Cointreau, lime juice and sugar syrup and blend until the liquid has a slush-like consistency.

 

Grab a large plate and spread an even layer of salt or sugar on it, whichever you prefer.

 

Pour a little of the cocktail mixture into a saucer. Dip the rim of your cocktail glass into the liquid, then dip it into the salt or sugar – this will create that iconic margarita edge.

 

Fill your glass carefully with the frozen cocktail, making sure not to ruin that edge. Add a slice lime and drink up!
