Gin Fizz

‘Somebody mixes a drink which his grandfather knew under the homely appellation of a “John Collins”, calls it a “Gin Fizz” and everybody wants the new drink,’ wrote a
n astute journalist in 1881. Still, this alternate name for the John Collins has stood the test of time. One variation is the optional egg white that has become common in this drink. The combination of egg white and soda water creates a meringue-like foam which can stand higher than the rim of the glass. However, even without the egg, and by any name, this is a wonderfully refreshing drink.
50ml Sipsmith London Dry Gin
50ml fresh lemon sour mix
100ml soda water or sparkling water
1 egg white (optional)
To garnish: A lemon half wheel
Combine the gin and lemon sour mix in an ice-filled cocktail shaker (add the egg white now if you are going to). Shake well. Strain into a highball glass (some people like ice in this one, others prefer it without). Top with a little soda water at a time, as the drink will rise up. Garnish with a lemon half wheel.
